August:

August-Lake Superior Dragon Boat Races-2014 Theme for The Many Faces of Breast Cancer Teams-Hawaiian

Laura Beth's Zucchini Bread and Muffins

3 eggs

2 cups sugar

2-3 cups grated zucchini

3 tsp. vanilla

3 cups flour

1 tsp. salt

1 tsp. baking soda

1/4 tsp. baking powder

1 Tbls. Cinnamon

1 cup nuts (optional)

1 cup raisins (optional) ( I added raisins but didn't  put in nuts because of allergies) Makes two loaves

325 degrees for 1 hour or until done

For the mini muffins it took 20-25 minutes at 325.

(I usually put in 3-4 cups of the zucchini ) And I have celiac so I substituted gluten free flour for the regular flour. I found the flour at Super One. It is called Domata and has Xanthan Gum in it so you don't have to add any. I hadn't seen this flour there before, it is a blue and white bag.

Thank you team mates, peeps, family members, friends who participated on our teams. The food was great..the Kahula pig, shredded pork from the Duluth Grill, the Shish Kabobs on rice, the fresh fruit (so many kinds), make your own fruit kabobs, zucchini bread, coconut cookies, Mary's salad, all the other salads, the treats, etc. We over ate but sure had fun doing it! Thank you team captains, Jim and Peg, drummers, Barb and Christina, the cookers: Mary Broman, Eleanor Porter and Peggy Anderson!  Thank you for a great day. We loved having newbies on the team as well!
